You tiao(油条) or you char kway(油炸鬼) sometimes known in English as Chinese cruller fried bread stick or Chinese doughnut, is a long, golden-brown, deep fried strip of dough in Chinese cuisine and other East and Southeast Asian cuisines and is usually eaten for breakfast.
People who love to eat You Tiao in Penang, definitely know this small little stall located at Penang Cintra street, although it doesn't has any signboard or even a name for this shop. The interior of this old style shop is very simple, just with a big pot filled with heated oil, a wooden table with some wheat flour on it and some golden fried You Tiao in a basket. A lot of people love You Tiao here due to it is crunchy and aromatic. The You Tiao still remains crunchy next morning for breakfast with coffee or soy milk.
The owner of this shop is Zhou Xiu Ying(周秀英) and she learned this technique of frying You Tiao from her father since around 1970. After so many years of frying You Tiao, she has already become an expert. According to her opinion, actually there is not much secret recipe in frying You Tiao. Most importantly is to have patient while preparing it. Although the ingredient of You Tiao is very simple, but it requires the cook to rub it slowly and fried it patiently. The heat of frying You Tiao is also very important in producing crunchy You Tiao.
Other that retail sell, she is also a You Tiao provider for many local restaurants and food stalls. For example the Bat Kut Teh(肉骨茶) and dessert stalls. Some of the restaurant also request half fried You Tiao for them.
