Penang:Ng Kee Cake Shop (伍记饼家)

Ng Kee Cake Shop(伍记饼家) has been started since around 1950's and is a famous traditional Chinese cake and confectionery shop within Penang. This shop was founded by senior Ng, an accomplished chef, who left Guangdong(广东) for Singapore and finally settled down in Penang. Until today, the cake shop still churns out senior Ng's specialties.

Ng Kee Cake Shop(伍记饼家) produce more than ten kinds of confectionery daily. Among them, the popular one are pepper biscuit(鹹切酥), coconut tart(椰子塔), egg tart and others. The pepper biscuit is quite thin and crunchy, with nuts, sesame seed and pepper powder. Many locals loves to buy them as a gift to their friends. "The machine to cut these pepper biscuit was ordered from Japan more than ten years ago. This kind of biscuit requires the baker to have a strong arms, due to part of the ingredients need man power to roll it over. Luckily we have the machine now because at my father's time, they even need to cut it themselves, which is not efficient.", said Mr. Loh(罗文隆), the second generation owner of the shop.

Other than pepper biscuits, their coconut biscuit is also creating popular demand. The filling of it is made from coconut shreds with homemade flavoring and the full-bodied aroma tempts most customer's palate. The yellowish egg tart is another recommendation, where the tart is filled in cookies skin, which is quite soft and when entering the mouth, it brings aroma of egg. On top of that, they also sell traditional yellow or red bean buns with lotus paste or red beans fillings. Besides buying in the shop, they also accept orders of the biscuits for special occasion - birthdays and weddings.

Although this cake shop interior design doesn't change for so many years since it first started, according to Mr. Loh, they always try to update themselves on the latest bakery technology by visiting and learning from local or oversea confectionery shops. He also mentioned that traditional Chinese confectionery shop like them is different from those ordinary one. They are more emphasis on the freshness and originality of their food, and because of that the working hour and preparation steps are more complicated. Most other paid staff will feel exhausting about that, so that's why currently the operating of the shop is depending on their family member. "Our man power is almost enough only, thus no matter how tired are we, we still need to hold on and cannot fall sick, because without us, there won't be any confectionery from our shop", said Mr. Loh.
