Perak:Aun Kheng Lim Salted Chicken

Salted baked chicken or "Yim Kok Kai"(盐焗鸡) is another specialty of Ipoh town and Aun Kheng Lim(宴琼林盐焗鸡) is the pioneer for salted chicken. This restaurant was established in 1987, it is easily identified through its red-and-white facade. The Salt Baked Chicken specially sold in Aun Kheng Lim is hard to find elsewhere and this restaurant has become one of the trademark of Ipoh food, which is as popular as Ipoh bean sprout noodle chicken. The restaurant was also interviewed by 8TV famous program "Ho Chiak" and some newspapers before.
Aun Kheng Lim salted chicken is wrapped together with Chinese herbs such as Dong Guai(当归) and Gei Zhi(wolfberry) in one piece of greaseproof paper and baked in an oven covered and filled with heated coarse salt crystals. It is indeed a brilliantly treated and cooked, the flesh is tender and very tasty. It is the process of cooking in which salt is absorbed by the meat to enhance the taste. The combination of salt and herbs gives the meat a unique flavor. With this unique cooking technique, the chicken essence is well preserved as well. Besides, they also imported their special salt from Africa to improve the taste. All the chicken used here are slightly smaller in size due to it is Kampung chicken which is has less fat compared to normal chickens sold in the wet market but more tender.
One specialty of this restaurant is it doesn't provide dine in service but only take away. As a sign of its popularity, staff manning the phone are constantly taking orders; walk-in customers would come in non-stop; and motorists stopping by at the roadside would signal with their fingers how many chickens they want. Many people bought it in bulks; probably 10 to 12 boxes of them and the chicken are packaged with nice boxes. Other than this main shop, there is another branch in Medan Tasek Perdana, Ipoh.
